Egg Whatever (Just for 1)

When you’re extremely hungry but you barely have the ingredients, try this. It worked for me when I was home alone, got a cold and accompanied by nothing but a cable TV.

2 eggs
1 slice of smoked chicken breast,chopped/ 2 tablespoons of corned beef/ 2 sausages,chopped
a pinch of pepper
a pinch of salt

mix all and fry in medium heat with some vegetable oil.
remove from frying pan. keep warm

half of small lettuce head, wash in running water, soak in iced water a while then drained (so it’s crunchy)
small head of broccoli/ a handful of spinach, cleaned and steamed for 3 minutes, remove from heat, cool
2 tablespoons of mayo
a pinch of pepper

mix the veggies and mix the mayo with the pepper.
by using your hands, mix the sauce and the veggies. using your hand can minimize the use of mayo and make sure all veggies are coated.

serve with ketchup/ chili sauce. if you want a more fulfilling dish, you can have French fries with this.
