It wasn't long ago when I first had my spaghetti with pesto in a nearby Italian restaurat. Before that, I've seen many cooking shows about the making but still that was not enough to encourage me to order it when I got the chance.Until that day....
I remember I took my father after picking him up from the office. I must say that was one of the most daring time. I mean, why would you order something with a 50-50 chance of NOT liking it? And of course, why would you have something with a sauce that consists of crushed garlic, crushed pine nuts and a bunch of herb you've never had before?
After that first bite, it turned out that I actually like it!!!
The following visit, there was nothing on my mind but that spaghetti with the pesto. Unfortunately, the restaurant's concept has changed. They're back to the casual family-restaurant style. AAAAAWWWWW!!!!!! My heart sank rock bottom. Where else can I get that taste (with that price)??? Hehehe....
I guess my disappontment showed a lot that my friend then sent me a pot of that pesto. She remembered her promise. So sweet of her.... ;-)
I bought extra fresh basil and because I was too lazy to grind it, I just chopped it as finely as I could. I added some extra olive oil, too. Parmesan was expensive so I substituted that with the usual grated cheddar. It turned out great. Thanks ya May....
